Beef with Tomatoes
Mix the following:
1/4 cup vinegar
2 tablespoons oil
1 1/2 teaspoons curry powder
1 teaspoon chili powder
1 tablespoon red pepper flakes
1/2 teaspoon black pepper
And add
beef, enough for two people for two meals
Marinate
When cooking, toss the beef and marinade mixture into cooking vessel and cook on low heat for at least two hours, longer if you can. In the last fifteen minutes, add:
2 tomatoes, diced
and in the last five minutes, add:
4 onion shoots (you can substitute green onions for this, or green onions and some very small pearl onions)
It was served with vegetable curry and pink rice. I’m getting used to pink rice. What can I say?
